"Don't assume you know it all." New Hope recommends asking others in the industry for help and support, because plenty of other retailers have had experiences you may not have had, that will help you manage your business better.
I agree. In fact, I'd go one step further and remind you that your consumers also don't know it all, and it's non-useful to assume they do. Just like you need to educate yourself, you also need to continually find new ways to educate customers about organics, so that they can realize the full value of organics and keep coming back for more.
